2 large sweet potatoes

1 cup quinoa

1/4 cup toasted pecans

Your choice of vinaigrette

How to Make It:

Preheat your oven to 400°F (200°C). Dice the sweet potatoes and give them a good toss in olive oil, salt, and pepper. Roast until they’re tender, approximately 20-25 minutes.

While those sweet potatoes are becoming deliciously tender, cook your quinoa as per the instructions on the package.

Mix together your roasted sweet potatoes, cooked quinoa, and toasted pecans. Top it off with a drizzle of your favorite vinaigrette. Happy Thanksgiving 2023.
